What is Kotte Kadubu
Kotte means Pouch in Kannada and Kadabu is a Kananda word for any steamed batter, which might or might not be seasoned with Spices or Flavors. In Karnataka we have many types of Kadabu, one of them is Kote Kadabu. Idly is a type of Kadabu too.
Kotte Kadabu is made out of rice batter, enclosed in Jack fruit Leaves and steamed in a Idly Cooker.
What is Unique about Kotte Kadabu
This is a very unique dish made in the homes of Mangalore, Udupi and other parts of Karavali region and used to be found on even local hotel menus.
Now it has become very rare to find them on the menus of Hotels, even in Karavali Region.
One of the reasons why most of the hotels may have stopped making Kotte Kadabu is it’s lot of work, compared to dishes like Idly.
First they have to organize Jack fruit leaves and then make them like a kotte ( pouch ) using the Jack fruit leaves and tiny needles made out of coconut leaves sticks. After that they have to fill the batter in this kotte ( pouch ), after which they steam in a large container or a idly steamer.
Comparatively Idlies are easier to make, but the taste of a Kotte Kadabu is totally different from an Idly, as the flavors of the jack fruit leaves are absorbed by the Kadabu while it is being steamed and it is truly unique.
What do they give along with Kotte Kadabu
It is either had with Sambhar and Chutney, just like Idli, but some hotels serve with Dal Thoove. Thoove is made out of Toor Dal, seasoned with hing, mustard seeds along with red chillies and is a bit watery.
Taste
As I had mentioned above the taste is unique as the flavors of the Jackfruit leaves are taken in by the batter when it is being steamed. The batter for Kotte Kadabu is more grainy and rougher compared to an Idly, so Kotte Kadabu is not as light as an Idly.
